Smoked Turkey, Brie, Green Apple & Watercress Sandwich

Anybody can make a turkey sandwich but this French inspired dish is something really special. Crusty French bread, mild creamy Brie, tart apple and peppery watercress bring sophistication and a quick trip through the oven makes the cheese melty, the bread toasty, and everything nice and warm. It is a meal in itself and served with a glass of crisp Chardonnay - it is awesome! :) Cooking Light Magazine, August 2003 edition.

Ingredients

4 serv.
  • honey mixed with a pinch red pepper flakes1 1⁄2 tablespoons
  • mustard1 1⁄2 tablespoons
  • (8 ounce) French baguettes1
  • thinly sliced smoked turkey breast6 ounces
  • brie cheese, thinly sliced1⁄4 lb
  • trimmed watercress1 cup
  • thinly sliced peeled granny smith apple1 cup
  • fresh ground black pepper1⁄8 teaspoon

Step-by-step instructions

    Preheat oven to 350°F.

    Combine honey (mixed with a pinch of red pepper flakes) and mustard in a small bowl.

    Cut bread in half lengthwise; place on a baking sheet.

    Spread honey mixture on bottom half of loaf; top with turkey and cheese.

    Bake at 350°F for 5 minutes or until cheese begins to melt.

    Arrange watercress and apple slices onto melted cheese; sprinkle with pepper.

    Cover with top half of loaf, and cut into 4 portions.
