Heat the oil in a medium skillet and sauté the onion for 5 minutes until soft and slightly golden. Add the garlic and cook for another minute. Add the tomatoes and sugar, bring to a boil and simmer for 20 minutes. Add a few dashes of Worcestershire sauce and season to taste. This basic sauce can be cooled or frozen.
Meanwhile, cook the pasta according to the package instructions. Preheat the grill to high heat. Mix the cheese and breadcrumbs together.
Drain the pasta and toss it with the sauce. Add the sausages (if using) and place in a heat‑proof dish. Sprinkle with the cheese crumbs and bake for 3‑5 minutes until a bubbly, hot, golden crust forms. Serve with a simple salad.
