Step-by-step instructions

    Melt the butter, sugar, and syrup in a saucepan over low heat, stirring occasionally. Remove from heat and let cool for a few minutes. In a large bowl, whisk together the flour, cocoa, and ginger. Pour the wet ingredients into the dry ones and mix until a dough forms. Wrap and chill for 30 minutes. It can be stored frozen for up to three months.

    Preheat the oven to 190 °C/170 °C with fan/gas 5 and line two large baking trays with parchment paper. To make the game board, roll out half of the dough into a 20 × 20 cm square. Bake for 12 minutes until the edges become firm and slightly darker than the centre. Let it cool slightly and set, then transfer to a rack to cool completely.

    Meanwhile, to make the game pieces, roll out the remaining dough to a thickness of 3 mm. Use a round cutter of 7 cm and a tree‑shaped cutter of 7 cm to cut out about 32 cookies (16 of each shape). Arrange them on a tray and bake for 8 minutes until the edges become slightly darker. Let them cool.

    Mix the royal icing with 2 tbsp of warm water until the icing is fluid enough for a piping bag but still thick enough to hold its shape. Add more water by teaspoon if needed. Pipe lines onto a large square cookie with a bag, creating the tic‑tac‑toe board. Pipe drops of “cream” onto the round cookies, mimicking Christmas puddings. Tint most of the remaining icing green and use it to decorate the trees and apply mistletoe leaves on the pudding tops. Tint the rest of the icing red and add holly berries and toy balls onto the cookies, or use sprinkles if desired.

    Allow the icing to set completely, then pack it in an airtight jar. It will keep for at least a week.
