Make this strawberry mousse using only three ingredients. Based on puree, topped with a creamy mousse, creating an impressive yet simple summer dessert.
Select four of the most beautiful strawberries and set them aside to use at the end of making the mousse, then remove the stems and roughly chop the rest. Transfer them to a blender or food processor together with the sugar and blend until smooth.
Whip the cream to stiff peaks. Set aside about 4 tbsp of strawberry puree in a small bowl, then gently fold the remaining puree into the whipped cream until the mixture attains an even pink colour. Distribute the set aside puree into four small glasses or ramekins. Spoon the mousse on top, then chill for at least 1 hour. It can be stored in the refrigerator for up to a day. Right before serving, halve the reserved strawberries and use them to garnish the mousse.
