Make your own fluffy crumpets for breakfast or brunch. They're worth the effort and taste great with butter.
Mix the yeast with 240 ml warm water in a bowl and let it sit for 5–10 minutes. Add warm milk, melted butter, salt and sugar, then stir in the flour and mix until smooth. Let rest for 30 minutes.
Dissolve the leavening agent in a small amount of water, then let it rise for 20–30 minutes.
Grease a heavy skillet with a little vegetable oil and heat over medium‑low heat. Lightly grease four crumpet rings about 9 cm in diameter. Pour batter into the rings, filling them to half height. Reduce heat to low, cover with a lid or an inverted deep pan so the crumpets have room to rise. Cook until the top is dry, about 10–12 minutes.
Flip them and cook for another 5 minutes until golden and firm. Repeat with the remaining batter. Serve toasted with butter or with grated cheese melted under a grill.
