Bake a batch of coconut cookies that fit in a jar. They have a delicate coconut flavor and a texture similar to macarons. Add chocolate chips if desired.

  • coconut oil60g g

  • eggs2
  • peanut butter2 tbsp tbsp
  • soft light-brown sugar60g g
  • baking powder¼ tsp tsp
  • chocolate chips2 tbsp tbsp

Step-by-step instructions

    Preheat the oven to 180°C/160°C with convection/gas 4 and line a baking tray with parchment paper. Place all ingredients in a bowl and mix well until the mixture comes together and reaches a moist, sand-like consistency.

    Form 10‑12 dough balls about the size of a walnut and place them on the tray a few centimeters apart. Flatten them into discs a few centimeters thick, then bake for 12‑14 minutes until lightly golden. Let cool for 10 minutes, then transfer to a wire rack and cool completely.
