Chocolate sundaes with pear and Christmas pudding

Use leftover Christmas pudding or cake in these luxurious, alcoholic sundaes, drizzled with chocolate‑orange sauce and finished with toasted chopped forest nuts.

Ingredients

  • leftover Christmas pudding85g g

    or Christmas cake, crumbly

  • brandy3 tbsp tbsp

    or orange liqueur (or use pear juice)

  • canned pear410g g

    quarters, in juice

  • scoops of ice cream8

    (we used ginger ice cream)

  • toasted chopped forest nuts25g g
  • dark chocolate bar100g g
  • double cream50ml ml
  • brandy1 tbsp tbsp

    or orange liqueur (or use orange juice)

  • orangezest 1

    zest of 1

Step-by-step instructions

    First, make thin shavings from the chocolate bar by running a large knife over its surface. You only need a little – just enough to sprinkle over the sundaes. Set the shavings aside and break the remaining chocolate into a saucepan. Add the remaining sauce ingredients and heat gently, stirring, until the chocolate melts and a smooth glossy sauce forms.

    Crush the cake or pudding into glasses for the sundaes and drizzle with the alcohol or pear juice. Top with quartered pear and ice cream. Drizzle with chocolate sauce and sprinkle with forest nuts and chocolate shavings.
