A dessert loved by all generations, this chocolate sponge cake covered with soft cheese and chocolate glaze. Quick and simple, yet divine for tea.
Preheat the oven to 170 °C/150 °C with convection/gas 3 and line a rectangular 20×30 cm pan with parchment paper.
Beat the yolks with powdered sugar, then gradually whisk in 5 tbsp of hot water.
Combine all dry ingredients and add them to the yolks one tablespoon at a time, alternating with the oil. Beat the egg whites to stiff peaks and gently fold them into the batter.
Pour the batter into the pan and bake for 15–20 minutes, or until a skewer inserted in the centre comes out clean. Let cool.
For the cream, beat the butter, soft cheese and powdered sugar until smooth and spread it evenly over the cooled sponge.
For the glaze, melt the chocolate with butter in a heat‑proof bowl over a saucepan of barely simmering water, ensuring the bowl does not touch the water. Pour the glaze over the cream surface.
