These sweet, fluffy American pancakes are filled with chocolate chips. Serve them with a dollop of whipped cream or ice cream – the perfect family treat.
Sift the flour, baking powder and ¼ tsp salt into a large mixing bowl. Add the granulated sugar and stir until combined.
Beat the eggs and milk in a jug. Make a well in the center of the dry ingredients and pour in the wet mixture. Whisk everything together until you have a smooth batter. Gently fold in most of the chocolate chips.
Heat a small amount of butter in a large non‑stick skillet over medium heat, swirling to coat the surface. Add 2‑3 tbsp of batter to the pan and cook for 1‑2 minutes until bubbles appear on the surface. Flip the pancake and cook another 2 minutes on the other side until golden‑brown and risen. Continue with the remaining batter, keeping finished pancakes warm in a low‑temperature oven.
Stack the pancakes on plates, sprinkle with the remaining chocolate chips and add a spoonful of whipped cream or ice cream, if desired.
