Chocolate Caramel Cookies

Filled with pieces of chocolate‑caramel cookie bars, these cookies are best enjoyed warm from the oven, with a melted soft centre. They are also perfect for making ice‑cream sandwiches.

Ingredients

    room temperature

  • soft light brown sugar120g g
  • egg1
  • self‑raising flour100g g
  • oats50g g
  • chocolate chips100g g
  • mini fudge1 tbsp

  • chocolate‑caramel cookie bars4 x 25g packs

    sliced

Step-by-step instructions

    Preheat the oven to 200 °C (or 180 °C with convection/gas 6). Line two baking trays with parchment paper.

    Beat the butter and sugar in a bowl with an electric mixer until pale and light, then add the egg, flour, oats and a pinch of salt. Beat again until combined.

    Add the chocolate chips and mini fudge chunks, then spoon round portions of dough onto the prepared trays – about 12 should form. Gently press pieces of chocolate‑caramel cookie bar onto the top of each mound and bake for 12‑15 minutes or until the edges turn golden.

    Let cool on the paper for a few minutes, then transfer to a wire rack to cool completely or enjoy while warm.
