Chicken a La Poland

Found this in bottom of my recipe box, I had cut this from the Miami Herald many years ago to try. Now 20+ years later I made it for my family and we love it! We loved the onions in the bottom of the pan and I plan on doubling the amount the next time I make it. NEEDS TO MARINADE OVER NIGHT!

Ingredients

8 serv.
  • boneless skinless chicken breast halves8
  • white wine (doesn't say what kind)2 cups
  • large sweet onion, sliced into rings1
  • light mayonnaise (I used regular)1 cup
  • garlic powder1 teaspoon
  • salt1⁄2 teaspoon
  • black pepper1⁄4 teaspoon
  • freshly grated parmesan cheese (I used packaged shredded, 1 cup)3 1⁄2 ounces

Step-by-step instructions

    Marinate chicken in wine over night.

    Discard marinade.

  3. 3

    Preheat oven to 350 degrees.

  4. 4

    Place sliced onion on the bottom of 13 x 9 inch baking pan.

    Dot onions with 1/4 cup mayo.

  6. 6

    In mixing bowl, combine remaining mayo, garlic powder, salt & pepper.

    Coat chicken thoroughly with mayo mixture and place on top of onions.

    Bake covered, at 350 for 35 minutes.

    Uncover & sprinkle with Parmesan

  10. 10

    Bake 15 to 20 minute more until bubbly.
