Cheesy stuffed pancakes

Use leftovers from a cheese board to make these cheesy pancakes. They are perfect for Boxing Day or a New Year brunch, and can be made with just five ingredients.

Ingredients

4 serv.
  • mascarpone350g g
  • chives½ small bunch of

    finely chopped, plus extra for serving

  • Gruyère150g g

    Comté or other hard cheese, including vegetarian alternatives, grated

  • unsweetened pancakes8

  • cooked ham350g g

    or smoked salmon (optional)

Step-by-step instructions

    Preheat the oven to 180 °C/160 °C with convection/gas 4. Warm the mascarpone in the microwave for 1–2 minutes, or until softened. Add the chives and half of the grated hard cheese, then season generously with black pepper and a pinch of salt.

    Line a baking tray with parchment paper. Spread the mascarpone mixture over half of each pancake, then place the ham (or, if using salmon, add it to the pancakes just before serving). Fold the pancakes in half, then again in half to form a triangular shape, and transfer them to the tray. Sprinkle with the remaining grated cheese and bake for 15 minutes, or until golden and bubbling. Garnish with a little more chives before serving.
