Savory version of the classic fluffy waffle. Chives and cheddar – a perfect combination in this very simple recipe. Serve with sautéed spinach and fried egg for a tasty brunch.

Step-by-step instructions

    Preheat the waffle iron according to the manufacturer's instructions. Whisk the egg whites to stiff peaks. In a separate large bowl combine flour, baking soda, paprika, mustard powder, chives and season with salt and black pepper. Add the grated cheese, then make a well in the centre and add the yolks and melted butter. Begin mixing with a whisk‑balloon; continue whisking, gradually adding milk until you obtain a smooth, thick batter. Gently fold in the egg whites with a metal spoon.

    Heat the oven to 180°C/160°C with convection/gas 4. Use a ladle to pour batter into the waffle iron and cook for 5 minutes or according to the manufacturer's instructions. Repeat until all batter is used, placing the finished waffles on a tray.

    When all waffles are ready, transfer them to the oven for another 5 minutes to warm and brown. Serve deliciously with sautéed spinach and a fried egg.
