A combination of banana bread and a glazed cupcake, this simple banana bread recipe bakes quickly and can be frozen. Great for using overripe bananas.
Preheat the oven to 180 °C/160 °C convection/gas 4. Grease a 2 lb loaf pan with butter and line the bottom and sides with parchment paper.
Beat 140 g softened butter and 140 g caster sugar until light and fluffy, then slowly add the 2 beaten large eggs together with a small amount of the 140 g flour.
Gently fold in the remaining flour, 1 tsp baking powder, and the 2 mashed bananas.
Pour the batter into the prepared pan and bake for about 50 minutes, or until done. Check the bread every 5 minutes starting at 30‑40 minutes by inserting a skewer (it should come out easily), as the time may vary depending on your loaf pan.
Cool in the pan for 10 minutes, then remove onto a wire rack.
Mix 50 g powdered sugar with 2‑3 tsp water to make a thin glaze.
Drizzle the glaze over the top of the cake and decorate with a handful of banana chips.
