Boulanger Potatoes with Bacon

This wonderful dish is a classic potato dish perfect for serving with your Sunday baked meat dish.

Ingredients

6 serv.
  • butter100g g

    plus extra for greasing

  • smoked bacon100g g

    cut into lardons

  • large potatoes2kg g

    thinly sliced (ideal for mandoline)

  • white onion300g g

    thinly sliced

  • fresh chicken broth500ml ml

Step-by-step instructions

    Preheat the oven to 200C/180C fan/gas 6 and grease a large baking dish. Melt the butter in a large skillet over medium heat. Add the bacon and season well. Cook until golden and crisp, about 5 minutes.

    In a large bowl gently combine the potatoes with the onion, bacon and a little more seasoning. Transfer the mixture to the prepared dish and press it down, pouring over the broth.

    Bake in the centre of the oven for 1 hour 45 minutes, covering the potatoes after an hour so they don’t burn. When the dish is done, a knife should slide through the potatoes easily.
