Blood orange and cardamom pancakes (aebleskiver)

These cozy round pancakes made with kefir have citrus and spice notes. Traditional Danish treat called aebleskiver. It's all about the gigge!

Ingredients

  • plain flour125g g
  • baking powder½ tsp tsp
  • ground cardamom½ tsp tsp
  • kefir200ml ml
  • large eggs2

    separated

  • blood orange1

    with zest

  • blood orange1 tbsp tbsp

    juice

  • butter50g g

    melted and cooled, plus extra for greasing

  • powdered sugar1 tbsp tbsp
  • powdered sugar

    for sprinkling

Step-by-step instructions

    In a large bowl combine flour, baking powder, cardamom and a pinch of salt. In another bowl mix kefir, yolks, zest and blood orange juice and butter. Pour the wet ingredients into the dry and whisk with a whisk until a smooth batter forms.

    Whisk the egg whites to stiff peaks, then add the powdered sugar, whisk again, and gently fold the meringue into the batter.

    Heat a aebleskiver pan with butter over medium‑high heat. Spoon about 1 tbsp of batter into each cavity and cook for about 1 minute until set. Using a skewer or a sharp stick knife, rotate the pancakes about 40 degrees, add a little more batter, let it sit and flip again, cooking and turning until you obtain a golden, fluffy ball. Alternatively, drop batter by spoon onto a greased non‑stick pan and fry a few minutes on each side. Dust with powdered sugar and serve hot.
