Fragrant pineapple grilled and served with a thick chocolate‑coconut sauce – a true tropical delight that elevates any festive meal. Serve warm, garnished with mint leaves, and let the aroma captivate the whole family.
Cut off the top and bottom of the pineapple, then use a knife to lift the skin around the entire perimeter, removing it. Remove the remaining “eyes” – the small pits in the flesh. Slice the pineapple through the core into eight wedges and remove the core from each wedge. Thread the wedges onto metal skewers.
Warm the dark chocolate, golden syrup and coconut milk in a saucepan over low heat, stirring constantly until the chocolate melts and the mixture becomes smooth. Optionally, you can prepare the sauce in a grill pan on a cooler part of the grill. Keep the sauce warm until you are ready to serve.
Grill the pineapple wedges over charcoal on the grill or in a hot grill pan over medium‑high heat for 5‑6 minutes per side until they develop a light char. Arrange them on a platter, drizzle with the chocolate sauce and, if desired, sprinkle mint leaves. Serve with any remaining sauce in a separate dipping bowl.
