Baked in aromatic foil, these soft plantain slices are a true Latin American delight. A sweet hint of sugar and juicy orange aroma make them perfect both as a dessert and a light snack.
Peel the plantains and slice them crosswise into 2.5 cm thick rounds. Arrange the slices on a large sheet of foil, keeping them together to retain their shape.
Brush each slice with butter (melt it if needed) and sprinkle with sugar. Wrap in foil, forming a “parcel”, then drizzle with freshly squeezed orange juice and sprinkle with ground salt and black pepper. Seal the packet tightly so it closes well. (This step can be prepared ahead of time, up to 24 hours.)
Place the packets on the grill rack and cook for 30 minutes, until the plantains become tender. Check doneness by opening a packet and piercing a slice with a knife.
