Incredibly sweet, refreshing and light treat that combines tropical juiciness of bananas and mango with aromatic passion fruit caramel — perfect for a quick one‑pan dinner.
In a small saucepan, bring the juice of one orange and 140 g (5 oz) of golden sugar to a boil, stirring constantly. Halve the passion fruits and squeeze the pulp into the saucepan. Add the thinly sliced mango and, when the mixture boils again, remove the pan from the heat.
Peel the bananas and cut each diagonally into five pieces. Drizzle the slices with lime juice and set aside. Evenly sprinkle the remaining sugar on the bottom of a large heavy skillet. Place the skillet over medium heat until the sugar melts and turns into a golden caramel. Add the bananas and sauté for 3‑4 minutes, turning once.
Reduce the heat, add the prepared passion fruit and mango mixture, and heat for another 2 minutes. Transfer the fruit to plates, serve warm, sprinkled with lime zest. If desired, you can prepare a day ahead, chill, and gently reheat before serving.
