Banana Maple Towers

A light, low‑fat dessert that will enchant your taste buds – banana aroma, maple syrup and a hint of nutmeg create a truly festive atmosphere.

Ingredients

  • butter½ ч. л. ½ tsp
  • large banana1
  • medium eggs2
  • vanilla extract1 ч. л. tsp
  • fresh breadcrumbs50 г g
  • golden fine sugar25 г g
  • semi‑skimmed milk300 мл/½ pt ml/½ pt
  • raisins50 г g
  • maple syrup4 ст. л. tbsp
  • low‑fat crème fraîche4 ч. л. tsp
  • grated nutmeg

Step-by-step instructions

    Preheat the oven to 180 °C with convection (or 200 °C conventional, gas mark 6). Grease four 150 ml molds (or heat‑proof cups) with butter – this will ease removal of the towers and add a light flavor.

    In a large bowl, mash the banana with a fork. Add the eggs and vanilla extract, whisk, then fold in the breadcrumbs, golden sugar, semi‑skimmed milk and raisins.

    Divide the batter evenly among the molds. Place the molds in a deep baking dish and pour hot water into it until it reaches about halfway up the sides.

    Bake uncovered for 35 minutes, until the pudding sets. Allow to cool slightly, then carefully invert onto serving plates.

    Drizzle each tower with a tablespoon of maple syrup, add a teaspoon of low‑fat crème fraîche, and, if desired, sprinkle with freshly grated nutmeg.
