Enjoy a fragrant, soft loaf where banana meets gentle coconut and warm cardamom.
Preheat the oven to 160 °C (140 °C convection) – gas 3. Grease a 900 g loaf pan with butter and line it with a strip of parchment paper.
Melt the coconut oil or butter in a dry pan or microwave. Mash the ripe bananas, add the melted oil (or butter), eggs, sugar and yogurt, and mix well.
In a large bowl combine the flour, baking powder, ground cardamom and a pinch of salt. Add the wet mixture to the dry ingredients and whisk until the dough is homogeneous.
Pour the batter into the prepared pan, smooth the top. Bake for 1 hour 10 minutes until the surface turns golden and the bread has risen.
Check doneness with a skewer: it should come out dry with only a few crumbs. If needed, return the bread to the oven for another 5‑10 minutes and check again until done.
Serve the bread slightly warm. Once cooled, keep it in the pan for up to five days.
