A fragrant bacon jam – easy to make, perfect as a gift, and keeps for up to a month in the fridge.
Sauté the bacon in a large non‑stick skillet for 5–10 minutes, until the strips develop a golden‑crisp crust. Remove it with a slotted spatula onto a plate, leaving the fat in the pan.
Reduce the heat to low and braise the onion in the bacon fat for 15–20 minutes, until it becomes soft and slightly caramelized. Add the garlic, sugar, apple cider vinegar, bourbon, maple syrup, coffee and the sautéed bacon, and stir.
Simmer over low heat for 25–30 minutes, stirring occasionally, until the mixture thickens and reaches a thick‑syrup consistency. Turn off the heat, let it cool slightly, then carefully transfer to a food processor. Pulse briefly to obtain a homogeneous paste with small pieces. Afterwards, cool and divide into two sterilized jars. Store in the refrigerator for up to a month.
