Crispy "soldiers" from young asparagus, highlighted with chili and paprika aroma, and a soft boiled egg — an ideal light snack.
Heat 1 tbsp of olive oil in a large skillet over medium heat.
Add the breadcrumbs and fry them, stirring constantly, until they become golden‑crisp.
Sprinkle the breadcrumbs with a pinch of chili and paprika, add coarse sea salt, quickly stir, and remove from heat to let cool.
In a large pot bring salted water to a boil, drop in the asparagus spears and cook 3‑5 minutes until they are tender but still retain crunch.
Simultaneously with the asparagus, boil the eggs in a separate pot for 3‑4 minutes so the yolk remains soft‑runny.
Drain the water from the asparagus and arrange the spears on plates.
Carefully cut each egg in half and place it in the 'nest' of the asparagus.
Sprinkle the finished dish with the toasted breadcrumbs and serve immediately.
