Light, airy batter envelops juicy apples and pears, and a golden crust gives a crunch that pairs perfectly with fragrant vanilla ice cream — try it and you won’t be able to stop!
Prepare the batter (see the “Suitable for” section on the right). First separate 2 eggs, placing the whites in a clean bowl. Whisk the whites to soft peaks, then gently fold them into the prepared batter and mix quickly. Peel the pears, remove the cores and slice them into wedges. Peel the apple, remove the core and slice into rings. Toss the prepared fruit with 1 tsp lemon juice to prevent browning. Mix 1 tsp ground cinnamon with the sugar and set aside.
Heat the butter in a deep‑fryer or large pan to 180 °C; when a drop of batter sizzles and turns golden after about 20 seconds, dip the fruit pieces in the batter and fry them in the hot oil until a crisp golden crust forms. Using a slotted spoon, transfer the finished fritters to a paper towel, then roll them in sugar. Serve immediately with vanilla ice cream.
