In a large bowl combine 200 g flour, 1 ½ tsp baking powder, 1 tbsp sugar and a pinch of salt.
Make a well in the center, crack in 3 large eggs, add 25 g melted butter and 200 ml milk.
Combine the dry mixture with the wet ingredients and whisk quickly until a smooth batter without lumps forms.
Heat a little butter and 1 tsp vegetable oil in a large non‑stick skillet over medium heat. When the butter foams, pour batter circles about 8 cm in diameter, leaving space between the pancakes.
Cook 1–2 minutes until small bubbles appear on the surface and pop. Flip and cook another 1 minute until golden. Continue until batter is used up.
Transfer the pancakes to a plate, drizzle with maple syrup and add your favorite toppings.
