In just ten minutes you’ll have a delicate dessert trifle that makes a perfect finish to a Sunday lunch — fragrant, light and elegant.
1. Place cubes of Madeira cake at the bottom of four small glass serving dishes. In a separate bowl, mix ½ cup of Disaronno liqueur with 6 tbsp of the reserved apricot juice, then evenly distribute the mixture among the dishes. Top with sliced apricots over the cake, then pour the custard over them. Cover the dishes and chill for at least 10 minutes (up to a day).
2. Just before serving, whisk the remaining Disaronno with the cream until light and stable, then spread the resulting cream over the custard and sprinkle with toasted almond slices.
