Akrotiri: Fried Halloumi

This recipe is from week three of my food blog, "Travel by Stove." I am attempting to cook one meal from every country on Earth, and Akrotiri is my third stop. This very simple recipe requires a Halloumi cheese, which is made on the Island of Cyprus from a blend of goat and sheep's milk. It can usually be found in gourmet cheese shops.

Ingredients

4 serv.
  • halloumi cheese1

    (8 ounce) package

  • olive oil1⁄2 teaspoon

Step-by-step instructions

    Slice the cheese about 3/8th inch thick, brush with olive oil on both sides and sear in a hot pan.

    The cheese should be a golden color on each side. If you pan is hot enough, it should only take one to two minutes per side.
