Prepare these delicate chocolate fondants in an air fryer ahead of time, chill or freeze until serving — and when you’re ready, simply crisp them for another 2 minutes if using frozen ones.
Grease the interior of four flan or pudding molds with melted butter. Sprinkle cocoa powder into the mold, rotate it to coat the walls evenly, and collect the excess in a bowl. Repeat with the remaining molds.
Place the butter and chocolate in a heat‑proof bowl. Set it over a saucepan of simmering water, ensuring the bowl bottom does not touch the water, and stir occasionally until the mixture melts. You can also melt it in the microwave in short bursts. Let it cool slightly.
Whisk the eggs, sugar and a pinch of salt with an electric mixer until the mixture becomes pale, fluffy and almost doubles in volume (about 3‑4 minutes). Gently fold in the melted chocolate‑butter mixture, then the sifted flour. Spoon the batter into the prepared molds, leaving a little space at the edge. Chill for at least 1 hour.
Preheat the air fryer to 180 °C. Cook the fondants for 10 minutes, until the top sets and separates from the mold walls. Let stand for 1 minute, then serve in the molds or carefully unmold onto plates and serve with ice cream or whipped cream.
