This non-alcoholic margarita is AMAZING! Made with a simple jalapeño-cilantro syrup, lime juice, tonic water, and no alcohol.
To make the simple syrup: Bring sugar, water, cilantro and jalapeño to a gentle boil in a small saucepan for about 5 minutes, until the sugar dissolves and the cilantro and jalapeño infuse the liquid. Strain out the cilantro and jalapeño, and store the syrup in a jar or small pitcher in the refrigerator for several weeks. I like to keep it on hand for quick, fun drinks!
For the Tajín rim: Mix sugar, salt and Tajín on a small plate. Brush a little lime juice or simple syrup around the rim of the glass and immediately dip it into the Tajín mixture so it sticks to the side of the glass. Beautiful!
To make the non-alcoholic margarita: Place a few ice cubes in a glass. For one margarita I usually use 1.5 oz lime juice, 2 oz simple syrup and tonic water to taste. You can also use a shaker, or simply pour everything into the glass and stir gently. ENJOY THE MOMENT.
