How to choose
Choose pieces that are firm, not mushy. The flesh should be opaque and not discolored. Look for a bright, clean appearance. Avoid pieces with a strong, unpleasant odor – a slight salty smell is normal. Consider the level of saltiness – some are more heavily salted than others. Check the packaging for the date of production and best before date.
How to store
Store in a tightly sealed container in the refrigerator. Submerge the salt cod in water for 24-48 hours, changing the water several times, to remove excess salt before cooking. After desalting, it can be stored in the refrigerator for up to 3 days. For longer storage, freeze it after desalting. Frozen, it can last for several months.
