How to choose
Look for creamy‑white, elastic grains without dry spots or mold. Active grains will quickly thicken milk and emit a pleasant mild sour aroma.
How to store
Keep in the refrigerator immersed in fresh milk (or a diluted water‑starch solution) at +4 °C, changing the milk weekly. For longer storage, freeze the dry grains up to 6 months.
