Einkorn Soda Bread

Use einkorn flour – one of the oldest wheat varieties people ate – to make this soda bread. It has a pleasant rich nutty flavor.

Ingredients

  • einkorn flour250g g

    plus extra for dusting

  • regular flour250g g
  • baking soda2 tsp tsp
  • sea salt1½ tsp fine tsp
  • soft brown sugar1 tbsp tbsp
  • natural yogurt370ml ml
  • large egg1

Step-by-step instructions

    Preheat the oven to 200 °C/180 °C with convection/gas 6. Sprinkle a little einkorn flour onto a baking tray, then sift both flours, the soda, salt and sugar into a bowl and mix. In a separate container whisk together the yogurt and the egg.

    Make a well in the centre of the dry ingredients and pour the wet mixture into it. Stir quickly to obtain a slightly sticky dough. Shape it into a round loaf about 4‑5 cm thick and place it in the centre of the tray. Dip the handle of a wooden spoon in flour, then gently press it onto the surface, creating a cross. Lightly sprinkle a little more einkorn flour.

    Bake in the oven for 40‑45 minutes, or until the loaf has risen slightly and the cross shows no grey, undercooked spots. Let it cool, then serve with salted butter, if desired.
