We are on cloud nine! Make these fluffy meringue clouds together with kids and fill them with rainbow sprinkles for a bright surprise.

Step-by-step instructions

    Preheat the oven to 120 °C/100 °C with convection/gas 1. Line two baking trays with parchment paper. Using a pencil, draw 6‑8 clouds on each sheet, about 10 cm wide and 8 cm high. Use the template, as the left half of the cloud must be a mirror image of the right (otherwise they won’t match when joined). Then flip the parchment so the pencil marks don’t touch the meringue.

    Beat the egg whites until stiff peaks form, then gradually add the sugar by the spoonful, one at a time, continuing to beat until the mixture becomes stiff and glossy. Add the black food colouring to achieve a light‑gray colour.

    Place the meringue mixture into a large pastry bag and pipe it using the templates. Bake for 20 minutes, then lower the temperature to 100 °C/80 °C with convection/gas ¼ and continue baking for another hour or until completely dry. Let it cool in the oven until fully cooled.

    To create lollipop‑style thunderclouds, pipe the stiff royal icing around the edge of the meringue, then add a little more to secure the stick. Fill the interior of the piped area with coloured sprinkles of your choice. Attach the lollipop stick to the cloud on top of the icing, then cover with the other half of the meringue to enclose the sprinkles and the stick’s top. Let it dry completely for about 3 hours or leave it overnight.
