Step-by-step instructions

   Place one portion of ice cream on two cookies, then top with the other two cookies and press lightly so the ice cream reaches the edges.

   Spread the hazelnuts on a plate. Roll the sides of each ice cream sandwich in the nuts, like a wheel, to create a nut crust, then either place in the freezer if serving later, or eat immediately.
