  • hot chili sauce150g g
  • soft light‑brown sugar3 tbsp tbsp
  • maple syrup2 tbsp tbsp
  • celery sticks

    for serving

  • sour cream

Step-by-step instructions

    Preheat the oven to 180 °C/160 °C convection/gas 4. Toss the chicken wings with oil and seasonings in a baking dish. Cook for 30 minutes. In a saucepan combine the butter, hot chili sauce, soft light‑brown sugar and maple syrup, add a pinch of salt and simmer until the mixture thickens and becomes glossy. Brush the wings with this glaze, then return to the oven for another 20 minutes – turning and re‑basting halfway through – until they become sticky. Serve with celery sticks and sour cream for dipping.
