Serve these cheesy oatcakes with soft cheese and grapes as a snack or dessert. If you can't find rolled oats, use coarsely ground oat groats.
Preheat the oven to 200 °C/180 °C with convection/gas 6. Melt the butter in a small saucepan, then let it cool slightly. Transfer the oats, flour, baking powder, parmesan and sesame seeds (if using) into a bowl with ½ tsp salt, then pour in the melted butter. Add 5 tbsp hot water and knead a firm dough, adding another tablespoon of hot water if needed.
Place the dough on a lightly floured work surface, roll out to the thickness of a one‑pound coin. Cut small squares or triangles about 3‑4 cm, then transfer them onto a parchment‑lined baking tray. Roll out the remaining dough and repeat. Bake for 12‑15 minutes until golden. Let cool in the tray for a few minutes, then transfer to a wire rack to cool completely. Serve with soft cheese and grapes, if desired.
