Use fresh berries to give the classic julep a dark and slightly tart hue. Make your own crushed ice by placing ice cubes in a food bag, sealing it and gently shaking.
Place the blackberries and mint leaves in a cocktail shaker and muddle them with a muddler or the end of a rolling pin until the mint wilts and the berries release their juice.
Add the bourbon and honey, then a handful of ice cubes. Close the shaker with its lid and shake until the outside feels cold.
Fill a glass with crushed ice, then strain the cocktail into it. Garnish with a sprig of mint and serve.
