LOVE this - from the Mennonite Community Cookbook. My mother made a skillet version of this a lot when I was a kid. She used fresh corn from our garden. Of course, fresh corn cut off the cob makes this recipe even more yummy! A great summer recipe.

Ingredients

6 serv.
  • cups fresh corn or 4 cups canned corn4
  • teaspoon salt1
  • teaspoon fresh ground pepper1⁄4
  • teaspoons sugar1 1⁄2
  • cup finely diced bacon1
  • butter

Step-by-step instructions

    Mix corn with salt, pepper and sugar.

    Place corn in a buttered baking dish.

  3. 3

    Cover entire dish with finely diced bacon.

  4. 4

    Bake at 350F for 35 minutes or until bacon is crisp.
