How to choose
Choose firm, unblemished yautia tubers. Avoid those with soft spots, bruises, or mold. Size isn't a major indicator of quality, but generally, medium-sized tubers are preferred. Look for tubers that are relatively smooth and free from sprouts.
How to store
Store yautia in a cool, dark, and well-ventilated place. They can be stored for several weeks at temperatures between 10-15°C (50-59°F). Avoid storing them in the refrigerator, as this can cause discoloration and affect the texture. Do not store near apples or bananas as they release ethylene gas which can cause sprouting.
