Beer lovers rejoice: you can replace sparkling water with beer to give the classic mojito a pleasant twist while preserving the flavor of white rum, mint and lime.
Set aside one lime segment, then squeeze the juice from the remaining pieces into a tall glass. Add the used lime pieces and muddle them using a muddler or the end of a rolling pin.
Set aside three mint leaves, then add the remaining mint to the glass together with the simple syrup. Fill the glass with crushed ice, then pour in the rum. Stir from the bottom upward with a long spoon to evenly distribute the lime juice and mint.
Top the glass with golden beer, then garnish the rim with the remaining lime segment and sprinkle the remaining mint leaves.
