How to choose
When selecting raw sturgeon, look for firm, shiny flesh with a fresh, mild smell. Avoid fish that appears dull, slimy, or has a strong, fishy odor. The gills should be bright red. Ensure the eyes are clear and bulging, not sunken. Check for firm scales (if present).
How to store
Store raw sturgeon in the coldest part of the refrigerator (ideally 0-2°C) on a bed of ice. Use within 1-2 days for optimal freshness. Alternatively, freeze immediately after purchase for longer storage (up to 3 months), but be aware that freezing can slightly affect the texture.
